SPINACH PINWHEELS

1 (10-ounce) package frozen spinach
1 1/2 cups mayonnaise
1 (16-ounce) carton sour cream
1 package dry ranch dressing mix
1 (3-ounce) bottle real bacon bits
1 cup minced onion
1 can water chestnuts, minced
1 (8-ounce) package cream cheese, room temperature
2 packages small size lc tortillas or 1 package large size

Thaw spinach; then squeeze it and discard all liquid. Coarsely chop dry
spinach, then mix with all filling ingredients. Spread on tortillas. 
Roll
into tubes.

Cover with plastic wrap and refrigerate for several hours until firm. 
Cut
into 1/4-inch slices to serve.



Cucumber Sour Cream Salad
From Low Carb Cooking, Nitty Gritty Press (out of print - check Ebay)

3 cucumbers, thinly sliced
2 tablespoons chopped chives
pepper to taste
1 cup sour cream
9 slices bacon, cooked, cooled and crumbled

Place cucumbers in a bowl. Mix chives, pepper and sour cream together 
and 
pour over cucumber slices. DO NOT SALT! Refrigerate for several hours. 
Just 
before serving, salt sour cream/cucumber mixture to taste. Pile on torn 
lettuce leaves, sprinkle with crumbled bacon. Makes 6 servings with 
approximately 2.6 carbs per serving.





Colleen's Stuffed Mushrooms

30 to 40 large mushrooms
take out all stems and put into blender and chop
add chopped stems to the following mixture
1 8 oz.pkg. softened cream cheese
1/4 c. chopped green onions
1/4 t. pepper
1/2 t. garlic powder
( you can add or delete your favorite spices
mix all together
put about 1 t. of mixture itnto each mushroome cap
put on sprayed cookie sheet
cook at 350 for about 15 to 20 min




Baked Fauxtato Soup

1 head cauliflower
16 oz chicken broth
1/2 cup shredded cheese
4 oz cream cheese
1 tbls butter
5 strips bacon, fried crisp
1/2 onion

Break up the cauliflower and boil until tender in the chicken broth. 
Fry the bacon until crisp and then saute the onion until tender in the 
bacon 
grease.  When the cauliflower is soft enough, remove from the broth 
with a 
slotted spoon. Process the cauliflower, cheeses and butter until 
smooth. Add 
the onions to the mixture. Return the mixture to the broth. You may 
have 
to add more broth, depending on the consistency. Simmer until warmed 
through.

This was far and away the most convincing recipe I've ever tasted.




Donna's Blueberry Topping

I buy a bag of frozen blueberries. I heat them up and thicken them with
Thick & Thin and sweeten with Splenda. Tastes like blueberry pie.
I've given up dairy but some whipped cream on top would be delightful.
It would be WONDERFUL in crepes, I'm sure
on pancakes, too.




Shrimp Puff Appetizers

1 can (4oz.) tiny shrimp, drained       less than 1 g. carb.

1/3 c mayonnaise                        0?

2 T grated Parmesan cheese              0.4 or less

1/2 t basil leaves                      0.2

2 egg whites, stiffly beaten            0.6



Preheat oven to 350 degrees. In medium bowl, conbine shrimp, 
mayonnaise,
cheese and basil.  Fold in egg whites. Place on well-buttered, 
foil-lined
cookie sheet. Bake for 20 minutes or until golden brown. Serve warm. 
Makes
20.

I made 17 using a  heaping Tablesoon per Puff.
